What is your opinion on teeth whitening?
There are different options for teeth whitening. I would avoid the ones with fluoride or propylene glycol in them. Hydrogen peroxide is safe–is it a pro-oxidant, which is the reason for its effectiveness. Carbamide peroxide is just hydrogen peroxide with urea, so is equally safe.
The two safest things to do at home to whiten teeth are swishing your mouth with hydrogen peroxide, or the use of baking soda. Baking soda will also whiten teeth.

My doctor says I can get all the vitamins and minerals I need from my food. What is your opinion on this?
I used to say the same thing to my patients, back in the days before I studied healthy alternatives. It is the party line of allopathic medicine, although that is starting to change. Here's the bottom line, and I'll follow up with some info on what allopaths are now doing:

What are your suggestions to help with arthritis. I have it in my hands, knees and feet.

Janet, Arthritis is not an easy topic–inflammation, auto-immune disease, wear-and-tear or overuse or abuse of joints, building joint tissue/cartilage–all are individual pieces to this puzzle. To start, don’t take in any pro-inflammatory foods–sugar, trans-fats, caffeine, aspartame– and take natural anti-inflammatories like MSM, DMSO, Boswelia, Curcumin. Also take Glucosamine to help with building connective tissue in the joints.
